Ingredients:
- 1 lb ground turkey.
- 4 cups frozen potatoes (you can substitute two cans of white beans).
- 1 cup diced bell peppers.
- 2 10oz cans of fire roasted corn.
- 1 tbsp minced garlic.
- 4 cups chicken stock or broth.Â
- 1 tbsp hot sauce.
- 1 tbsp olive oil.
- 1 tsp salt.
- 1 tbsp spicy all purpose seasoning. I used my West Coast Shake and Mi Amigo from https://unclestevesshake.com/
Prep:
- Sauté the bell peppers in the olive oil for 2-3 minutes. Add the salt while sautéing.

- Add in the garlic and sauté for another 1-2 minutes.Â

- Mix in the turkey meat and seasoning. Cook until the turkey is completely cooked through.Â


- In your crock pot add the turkey mix and the rest of the ingredients and give it a good mix.Â

- Turn the crock pot on high and let it go for 2-3 hours, stirring occasionally.Â
- Once done, serve with some cheese and sliced green onion and enjoy!Â
