My favorite meal would be…
This is a question I get all the time… It is usually accompanied with “what’s your favorite thing to cook” or “what is the best dish you make”, and the answer to those questions is… Braised Beef Short Ribs!
When I started focusing on my culinary journey years ago, this was one of the first dishes I started concentrating on. There is something about having a savory tender bite of beef with some creamy buttery mashed potatoes that just brings a huge smile to my face. So, I set out to find the best recipe I could, then try to improve on it.
The first few recipes I tried had red wine as the main braising liquid. While the short ribs turned out great, I still felt the wine tended to overpower the beef. Like the beef wasn’t going to be the star of the show.
I decided to ditch the red wine in the dish, and started just going with a nice beef stock, let me tell you that was the difference I wanted. So simple, but the stock became a compliment and enhancing element to the short ribs. And from that point on, that was the ticket and that made my recipe for braised beef short ribs my favorite dish. And became a family favorite!
So, there you have it, braised beef short ribs with creamy mashed potatoes would be my “last dish”, my favorite meal to eat and favorite dish to make!
